Dark Chocolate

Blog #118: An easy 3 ingredient sweet made with chocolate, dates and almonds. Yes, that’s it! My favorite is milk chocolate but I also enjoy semi sweet and dark chocolate. My husband saw a video of NBA basketball player Kevin Love’s favorite snack. So I decided to give it a go. All my husband said was dates, almonds and chocolate wrapped in chocolate. “Oh, covered in chocolate,” I said. Lol. Kevin Love uses 88% chocolate for this chocolate dessert. Makes sense since dates are super sweet.

Now, I have had pure chocolate and it is very bitter. 88% can”’t be that bad. I purchased the endangered species brand (every purchase supports wildfire). 88% dark chocolate with hints of fruit and spice. Although I didn’t really taste the fruit and spice, the chocolate was pretty good and not bitter at all!

I love chocolate! I actually keep chocolate chips in my freezer when I need some sweetness. A nice handful hits the spot and maybe a few handfuls to make trail mix.

Dates in Desserts

Dates are super sweet and are used in many healthy treats. It’s the substitution for sugar. There are many treats that are made with dates and you can’t even taste them. Dates just sweeten your treat without added sugar. My protein granola balls are made with dates and my kids love them. They wouldn’t just eat dates as a snack but incorporated into a bar or dessert they would. They have no idea it’s in there! One of my favorite store bought bars is the Larabar. My go to is the peanut butter chocolate bar. With just 4 ingredients you can’t go wrong.

Ingredients:

  • 88% dark chocolate
  • Dates
  • Almonds

I used a bag and half of dates because I had an extra bag of dates and decided to use all of them. I made a total of 52 dates. It’s one of those treats that leave you satisfied without wanting more than 1 or 2. However, they were really good and a few times had 2-4 pieces! Even my 9 year old likes these! They last a whole week in the fridge.

This recipe is simple! Stuff each date with an almond. Melt the chocolate and dip each date into the chocolate. Let the chocolate harden in the fridge and you have a healthy chocolaty treat!

Oil and Chocolate ?

When I melt chocolate I don’t add oil as I don’t like the extra calories. And the treat tastes the same without the oil. Oil is used to make the melted chocolate shiny and give it a smoother consistency to work with. I am also not selling these chocolates so I don’t mind the extra smoothness and shininess! They are made for my home and so it is perfectly fine ?. This dark chocolate, however was super shiny and smooth! I wonder if it’s because it’s pure chocolate compared to milk chocolate.

Healthy but satisfying chocolate treat!

Ingredients

  • 12 oz of 88% Dark Chocolate (Endangered Species Brand, recommended)

  • 12 oz of pitted dates ( the bag I purchased comes in 8 oz bags – I used 1+1/2 bag)

  • 52 whole almonds, unsalted

Directions

  • Break chocolate bar into small pieces and put in a pan to melt. I did the double boiler method, which consists of a pan with boiling water and then a small pan over that pan with the chocolate.* You can also microwave the chocolate in increments.
  • While the chocolate is melting, stuff each date with an almond.
  • Once chocolate is melted dip each stuffed date with chocolate and put on a cookie sheet. Once you have all the dates covered in chocolate, stick in the fridge for at least an hour to harden. Enjoy!

Notes

  • *If you put the chocolate pan directly on the stove, the chocolate will burn.

After I made these I looked up the Kevin Love video and realized that it was not almonds he used for this treat. Rather almond butter! Sounds even more delicious. I will have to try that and let you know how it tastes!

Lastly, I recommend making these with dark or semi-sweet chocolate. Milk chocolate would make this treat too sweet due to the dates being naturally sweet and added sugars from the milk chocolate.
