Cucumber season is from May through August. Just in time for the fall, I made a cucumber pumpkin spice bread. If you garden you may have an abundance of cucumbers. I have relatives who grow cucumbers and I have not been letting them go to waste. In the summer they taste amazing with a pinch of salt. A cucumber is made up of 96% water, which makes it super hydrating on those summer hot days. Now that fall is upon us and colder mornings you make be getting sick of cucumbers or just have no idea what to do what all those cucumbers! I have a couple of ideas to help you use them up!
There are so many healthy breakfast ideas without having the same thing everyday. Change things up. Try something new. It also doesn’t have to take you 30 minutes to make. I decided to make a part II on What to Do and Make with Leftovers. There are so many ways to incorporate your leftovers instead of tossing them in the trash! Of course, if you are not planning on using them right away then make sure to freeze them! Don't you love going to restaurants where there is a salad bar with a ton on roasted vegetables to add to your salad? I love that! I have thought of doing that on many occasions. Preparing a bunch of vegetables to add to my salads. Using my leftovers gives me the same results without having to make extras for salads!
