Valentine's Day should be celebrated everyday instead of once a year. We should celebrate love everyday. Whether it's Valentine's Day or not. However, it is a cute holiday. I do like the candy and chocolate and the colors of pink and red! Very pretty. Valentine's Day is also another excuse to eat chocolate and other sweets. This year, instead of buying candy for the kids, I am making chocolate & fruit dessert. You get chocolate, but you also get the fruits! Valentine's Day Chocolate & Fruit Dessert!
Winter holidays come with heavy meals. That is why fish is a good option. A fish you don't have quite often. The new year is here. Why not start off with a healthy meal to celebrate! I had wanted snapper for quite some time. When I called my local Whole Foods they told me they had 10 lbs of snapper in stock and that I should reserve the amount I wanted for pick up. I purchased 3 lbs and had it cleaned and filleted. My plan was to make snapper with pineapple salsa. This dish took me a total of 24 minutes, including the pineapple salsa. While the snapper was cooking, I made the salsa.
Have you ever had duck? To some it may be intimidating, as it's not an everyday meat people eat. I made a sweet roast and tender duck and boy was it absolutely delicious! It was my first time having it and making it. My husband had it once at a local restaurant called The Landing Restaurant. We are still celebrating the holiday season. Why not make a delicious roast and tender duck? Everyone says it tastes like chicken. I can confirm that is correct. The difference between chicken and duck is that duck is very fatty and has only dark meat. This explains why this meat is very tender.

The perfect gift idea for the pet lover. Make gingerbread cookies shaped like an animal! In my case, I made gingerbread cookies shaped like dogs and dog bones! If you don't like gingerbread cookies, make sugar cookies!
I love Christmas! All the things you have to do just to prepare for the holiday. You need to purchase gifts, wrap, decorate your home, prepare a meal. Wow, a lot! To get ready and not overwhelm myself. I make a list of everyone I need to buy gifts for. I make a list for all the kids, the adults, another for teachers, bus drivers and coaches and then a separate list for my kids and husband. I honestly make this list in October, just to have since we always have new babies in the family. I don't want to forget anyone!

Butter, garlic and lime! What an amazing combination. Cod is a fish that is pretty bland on its own. Which is great when you want to experiment with flavors. I don’t usually buy cod often but wanted something different. For lunch this weekend, I made a sautéed buttery, garlic cod with lime. If I had thought of the recipe in advance I would have let the fish marinate for a few hours before cooking. However, it still turned out delicious.
