Aside from salmon being my favorite fish to eat, I'd say tilapia is my second favorite. Why? Well, just like salmon, you can serve it with just about anything. There is salad, tacos, serve with a side of rice and vegetables, and the list goes on. I probably make this at least once a week. And honestly, I rarely make the same exact meal with tilapia. I am always coming up with new ideas on how to serve it. Two great things about tilapia is that it cooks in just about 7 minutes tops and it's an affordable fish! Many believe that fish is too expensive to buy every week, but it is actually cheaper than chicken or beef. It is also easier to digest! Give it a try, you won't be disappointed! This week I made chili honey tilapia salad & dressing.
Here is another yummy winter salad that is colorful and super filling. It is also meatless! Perfect for Meatless Mondays! It is a 4 Ingredient Kale Winter Salad with Roasted Sweet Potatoes, Roasted Chickpeas and Wild Rice. A fresh COLD salad ONLY screams spring or summer to me. During the winter I crave warm and cozy foods. The same goes for salads in the winter. To make this salad hearty, I sautéed the kale. I then roasted the chick peas and sweet potatoes. The fourth ingredient is wild rice, which I had as a leftover. All I had to do was heat it up. I served it with a vinaigrette dressing made up of olive oil, lemon and salt. And guess what? It only took me 20 minutes to make this DELICIOUS WINTER SALAD.
This is my last pumpkin spice post for the year! I promise! I want to end this fall spice obsession with a list of what to make with pumpkin spice! There are so many amazing recipes I have seen. Here is a list of what I have made and would like to make with this spice. Of course there are many many ideas. These are just a few, if you are looking for some inspiration!
I’ve been using pumpkin spice A LOT lately. Perfect excuse, because it’s fall. I had some leftover chicken and decided to make loaded pumpkin spice sweet potatoes. This meal is perfect to make with leftover thanksgiving turkey. I will definitely be making this again with turkey! Loaded sweet potatoes with everything fall. What else could you ask for? I only had a bit of chicken leftover and so I made my husband the one with chicken and I had the meatless one. They boys had resorted to russet potatoes. Honestly, I choose sweet potatoes over regular potatoes. Anything sweet is a YES.
I decided to make a part II on What to Do and Make with Leftovers. There are so many ways to incorporate your leftovers instead of tossing them in the trash! Of course, if you are not planning on using them right away then make sure to freeze them! Don't you love going to restaurants where there is a salad bar with a ton on roasted vegetables to add to your salad? I love that! I have thought of doing that on many occasions. Preparing a bunch of vegetables to add to my salads. Using my leftovers gives me the same results without having to make extras for salads!
