Don’t we all love thanksgiving leftovers? For one, no cooking and two its a comforting meal. But I must admit, after having the same meal for breakfast, lunch and dinner the next day I do get a bit tired of it on day 2 of leftovers. You can either freeze those leftovers or put them to use!
This is my last pumpkin spice post for the year! I promise! I want to end this fall spice obsession with a list of what to make with pumpkin spice! There are so many amazing recipes I have seen. Cooking a Thanksgiving Turkey can be challenging. Especially if this is your first time! I remember my first turkey years ago. It was a huge turkey, that took forever to thaw. And of course, half of the turkey was still frozen after it was done cooking! Luckily, the turkey was large enough that we had a half cooked turkey! We probably each have had some sort of turkey fail story LOL. There are so many questions on making a turkey that there is even a hotline! Although, I've never used it. What equals fall foods? Pumpkin spice, of course. You see it on the commercials and on many blogs. I too am obsessed with pumpkin spice everything! My husband loves spiced nuts. One of our favorites is the Habanero BBQ Almonds, which are sold everywhere, including your local Walgreens. To celebrate fall, I decided to make pumpkin spice pecans. It was delicious and simple to make, with only 3 ingredients!
Do you have a favorite side dish for Thanksgiving? I really love all my sides but my ultimate favorite is sautéed brussels sprouts and carrots with bacon. It is a must for Thanksgiving. It's full of fall colors and tastes amazing. Brussels sprouts and carrots with bacon is perfect, since there are so many dishes to already make. You don't have to worry about using multiple pans. I love roasted vegetables but this is one of the few vegetable dishes I like to sauté.
Seasonings and marinades are endless, with so many different combinations. November first is here. Time to start preparing for Thanksgiving. It will be here before you know it. Normally this time of year we are wondering what to make for dinner, who will host or if your are visiting family. Then of course you have to figure out if you are bringing a dish. Of course, this year will be a lot different than other years, due to social distancing. However, there is still a meal to prepare at home! More than ever, we need to be thankful for everything we have. Things may get worse but we have to be positive and be grateful.
Cucumber season is from May through August. Just in time for the fall, I made a cucumber pumpkin spice bread. If you garden you may have an abundance of cucumbers. I have relatives who grow cucumbers and I have not been letting them go to waste. In the summer they taste amazing with a pinch of salt. A cucumber is made up of 96% water, which makes it super hydrating on those summer hot days. Now that fall is upon us and colder mornings you make be getting sick of cucumbers or just have no idea what to do what all those cucumbers! I have a couple of ideas to help you use them up!
