Citrus Grilled Snapper (Done in 25 Minutes!)

Memorial Day is around the corner and the weather has been great. This time around, it is going to be a big celebration here in Massachusetts, as our governor is removing all COVID restrictions, starting on May 29th. Just in time for Memorial Day. Because the weather is so nice, I have started using my grill. I made a Citrus Grilled Snapper, that I have to share with you. And I thought, this would be a great meal to make on the grill. Healthy and so satisfying!

Whole Snapper

I love snapper but because we are in the England area of the US, we don’t get snapper often at many grocery stores. This week I found a whole snapper at my local Whole Foods. I decided to buy it even though I had my list of meals planned out for the week! Snapper is a warm water fish that is meaty and oh so good! The butcher descaled the fish and cleaned it all up for me. It was a total of 3 1/2 lbs. Remember not all of it is fish, as the head, eyes and bones are part of the weight. However, that amount is perfect for 4 servings.

The Meal

I made sauteed kale, grilled habanero pepper and tomato salad to serve with the snapper for my husband and I. For the dressing I used balsamic dressing. We had enough left, to make fish tacos with mango salsa for dinner. I was able to make 3 tacos with the leftovers from lunch. I had leftover pizza for the kids (which of course, they preferred)!

Citrus Grilled Snapper

Easy Recipe

This grilled snapper was an easy recipe. I usually make my own herb blend but had a citrus blend seasoning in my cupboard. I got mine at my local Whole Foods. It tastes like herbs but not citrusy at all. Which is why I added lots of fresh citrus to my snapper! You want to make sure you marinate the fish for a couple of hours to get the flavors into the fish. Another tip is to definitely add oil, as the foil tends to stick to the fish even with the oil. I would like to try non stick aluminum foil next time and see if that makes a difference on the grill.

  • whole snapper
  • citrus herb blend seasoning
  • fresh cilantro
  • nara oranges
  • lime
  • olive oil

A whole snapper cooked on the grill in just 25 minutes! Perfect to start the summer off!

Ingredients

  • 3 1/2 lbs – whole snapper, descaled

  • 2 nara oranges (1 cut into thin slices + 1 cut in half)

  • 1 lime – cut in half

  • 1 bunch of cilantro, rinsed and dried

  • Citrus Blend seasoning

  • Olive Oil

  • Serves 4

Directions

  • Start off by taking a large piece of heavy duty aluminum and laying it out on the counter. Drizzle some olive oil and lay the fish on top. Using a sharp knife, make 3 slices across the snapper. Stuff each slice with a nara orange (both sides is optional) I forgot and only did one side and it still turned out delicious!
  • Generously season both sides of the fish with the citrus herb seasoning. Squeeze the juices of the nara orange and lime all over the fish. Stuff the snapper with the leftover lime and nara orange, along with the bunch of cilantro. Drizzle some more olive oil on top. Wrap the snapper with the foil and let it marinate in the fridge for at least 2 hours or even overnight!
  • Turn your grill on high and lay the fish wrapped in foil. Grill for 10-12 minutes, flip and grill for another 10-12 minutes.
  • Carefully unwrap the fish, as the foil does tend to stick to the fish. Serve with your favorite salad or grilled vegetables!

Notes

  • Grilling time will be less for a smaller fish
