I was thinking of what to call this salad. Besides the color orange, we have the colors of the rainbow in this salad. I decided on calling it the Rainbow Roasted Vegetable Salad. Here we have red peppers and red onions. The onions look purple. Not sure where red comes in! Then there is broccolini and kale, corn and chickpeas and lastly, the blue cheese. This salad was so filling and so good! I went shopping for the ingredients for a second time. On my list for dinner this week, AGAIN!
Nectarines are one of my favorite fruits. Sweet and juicy with a soft bite. I could sit there and eat them as I would a bowl of popcorn LOL. Here is another 3 ingredient salad that is hassle free when you would rather be doing something else but still need to eat! Nectarine and blue cheese arugula salad. What's not to love?
During the summer months I tend to crave lighter and refreshing dishes. Having a light meal usually consists of easy prepping since there is either fruits or vegetables involved. This chickpea tuna salad is one of those light meals that do not require any cooking!
Homemade vs Store Bought Blog #86: On a weekly basis, I make about 5 salads a week, just for breakfast. To make my mornings quick, I purchase premade salads, such as this Kale Caesar Salad I am going to show you how to make! My husband loves salads. His favorites are Kale Caesar and the [...]
I made a Fresh Oregano Caprese Salad to go with this recipe I found on Pinterest. Instead of using fresh basil I used fresh oregano leaves, as I had a bunch leftover. I don't normally purchase fresh oregano. I often use dried oregano for many dishes.
I made a cilantro sauce marinated in chicken and mixed the sauce into a corn orzo salad. Cilantro by far is my favorite herb. I use it on just about every dish. If a dish calls for basil or parsley I end up using cilantro. Why? Because I always have it stocked. I can't live without it. Three things I always have in my kitchen is cilantro, lemons or limes and fresh parmesan cheese. Must haves, to make any dish!
Overview Blog #65: I admit I don’t make this bacon wrapped shrimp with watermelon salad recipe enough. This dish looks and sounds fancy but is very simple to make. As long as you have sweet watermelon you are good to go! I don’t purchase it during the winter since it’s an out of season fruit. [...]
