Now that Spring is here, let’s start making refreshing salads! I am sharing with you 5 spring salads to make this week! This is when I start adding fruits to my salads and more raw vegetables. Many fruits I use for salads are now returning for in season. Meaning, juicy fruits for a few months! I hate buying, fruits when not in season. Lately, I have been wanting strawberries and even though they aren’t in season yet, I decided to buy some. I actually used strawberries in my eggplant salad yesterday. Buttery Garlic Shrimp Pasta (Perfect for the Holidays)

For dinner I made a buttery garlic shrimp pasta. I have to admit I have been wanting pasta lately and my little one really enjoys it. It’s also an excuse to make it more often. First of all it’s easy, quick and very filling. Pasta is definitely a dish for those busy school nights. On top of that, the shrimp cooks in just about the same time your pasta cooks! I made this dish with the thought I could make it for Christmas Eve or Christmas. Pasta and seafood are dishes I lean towards for the holidays. Maybe because they are comforting dishes. Garlic Shrimp Pasta is easy but can be made as fancy as you want it!

Salt and Pepper Shrimp (Served 2 ways)

Salt and pepper shrimp is pretty tasty. Especially when it’s fried. Truth is I don’t fry food because of all the extra oil it takes to cook food and the smell of the oil. I prefer to bake or broil food instead of frying. For this recipe, I decided not to bread the shrimp. What would salt and pepper shrimp taste without the fried breading. After all it’s one of those appetizers that you can’t really say no to. Well I decided to take a chance and make salt and pepper shrimp (served 2 ways) in healthier way. Minus all the sodium in the salt! You really can’t make salt and pepper shrimp without the salt!
