What to Make with Thanksgiving Leftovers

Don’t we all love thanksgiving leftovers? For one, no cooking and two its a comforting meal. But I must admit, after having the same meal for breakfast, lunch and dinner the next day I do get a bit tired of it on day 2 of leftovers. You can either freeze those leftovers or put them to use!

Shop Early

Besides buying all your thanksgiving necessities also plan to purchase what you may need to whip up new meals with thanksgiving leftovers! This part is pretty easy, as these are ingredients that are on your usual weekly grocery list. Meaning, they won’t be sold out during the thanksgiving shopping rush!

Here is what I make with my leftovers!

Make Sandwiches

That’s a given! Make sandwiches. This is on everyones list. Make sure to use crusty bread, such as French, Italian or sourdough bread. Regular sandwich bread will result in a soggy, mushy sandwich. Add some turkey, stuffing, mashed potatoes and cranberry sauce. The cranberry sauce will give your sandwich that tang. It will be the spread. The crusty bread will give you that nice crunch. Mmm

Make Enchiladas

I make enchiladas ONCE a year. Yup that’s it. Super easy and you may have all the ingredients at home. Kris Jenner has a recipe I use. However it’s super easy to make. You can make it with your eyes closed. Well almost!

What About Soup?

Probably my favorite meal to make with leftovers! Turkey soup! Save the turkey drippings to make soup. Add some carrots, celery, potatoes and fresh herbs. Add the turkey last and voila! Make a large batch and freeze half for those sick days. I love having frozen soup on hand as I don’t eat canned soup.

So Many Sides

I find that I always have tons of sides for leftovers. The turkey is easy to freeze and use up but what about the sides? The potatoes or anything mashed is great with eggs, as is the stuffing. Make some bacon and you have a nice breakfast!

Cut the recipes in half or freeze the rest. And of course, you can make a nice plate for your elderly neighbor or family member for drop off since we can’t socialize this year!
