Here is another yummy winter salad that is colorful and super filling. It is also meatless! Perfect for Meatless Mondays! It is a 4 Ingredient Kale Winter Salad with Roasted Sweet Potatoes, Roasted Chickpeas and Wild Rice. A fresh COLD salad ONLY screams spring or summer to me. During the winter I crave warm and cozy foods. The same goes for salads in the winter. To make this salad hearty, I sautéed the kale. I then roasted the chick peas and sweet potatoes. The fourth ingredient is wild rice, which I had as a leftover. All I had to do was heat it up. I served it with a vinaigrette dressing made up of olive oil, lemon and salt. And guess what? It only took me 20 minutes to make this DELICIOUS WINTER SALAD.
Last week I posted Everything But The Bagel Drumsticks. In that post I explained how to make drumsticks and my favorite dry rubs. This week I decided to show you how to make chicken wings, the easy way. I notice many people bake their chicken wings in sauces or fry them. Frying chicken wings are so delicious but the house smells and too much oil! I like to BROIL my wings and then add the sauce. You get a nice crispy and brown wing. Plus you get all the flavors in the sauce, without burning your wings! Add the sauce at the end and still get all the flavor! They are so good and easy to make! No need to guess if they are cooked through!
Drumsticks are super cheap. Probably one of the most cost effective meals! When I first started making drumsticks it was always BBQ drumsticks. Which I was not a big fan off. Large drumsticks need to have crunchy skin for the ultimate flavor. I made everything but the bagel drumsticks this time around. A seasoning that is so versatile. You won't need anything but this seasoning to get all the flavor, all in one bottle!
We all know how to make burgers, right? I am here to show you a healthier way to eat your burger. A cheeseburger wrapped in lettuce instead of adding a bun. A healthy no bun cheeseburger. Start off the year eating right but still keeping the foods you like. By omitting the bun you are saving 150 calories minimum on your meal. Adding the extra toppings and sauces add up. Why not omit the bun when it is already empty calories?
Butter, garlic and lime! What an amazing combination. Cod is a fish that is pretty bland on its own. Which is great when you want to experiment with flavors. I don’t usually buy cod often but wanted something different. For lunch this weekend, I made a sautéed buttery, garlic cod with lime. If I had thought of the recipe in advance I would have let the fish marinate for a few hours before cooking. However, it still turned out delicious.
Due to the pandemic I can no longer send a lunch box container to school on the days my kids do attend school. I have to now be extra creative with food. Everything has to be packed in disposable bags, such as paper bags and plastic baggies. Sandwiches everyday is not doable. Probably because we do not eat sandwiches everyday at home! Pizza muffins for school lunch sounded like a great idea. The boys really love pizza and I mean very few people dislike pizza. Okay, I have met two people who don't like pizza. Can you believe it! Naan pizza are delicious but changing it up makes it more appealing than having the same style of pizza everyday.

I decided to make a part II on What to Do and Make with Leftovers. There are so many ways to incorporate your leftovers instead of tossing them in the trash! Of course, if you are not planning on using them right away then make sure to freeze them! Don't you love going to restaurants where there is a salad bar with a ton on roasted vegetables to add to your salad? I love that! I have thought of doing that on many occasions. Preparing a bunch of vegetables to add to my salads. Using my leftovers gives me the same results without having to make extras for salads!
